Celebrate Greek culinary traditions today on Greece’s Independence Day!
If you stop at a Greek restaurant, try souvlaki (grilled lamb marinated in lemon juice, oil, and herbs), dolmas (stuffed vegetables), or a gyro (roasted, minced lamb with onion, bell peppers, and tzatziki sauce, stuffed in a pita). Go easy on vegetable pies (spanakopita), baba ghanouj (eggplant and olive oil), baklava (sweet walnut phyllo dessert), and olive oil dipping sauce. Their calories add up!
Prepare a simple Greek-inspired dish.
- Create a Greek pizza. Brush a pita with olive oil and top with feta cheese, plum tomatoes, olives, and herbs (oregano, rosemary, thyme)—then bake.
- Toss a Greek salad. Greens, garnished with black olives, feta cubes (just a few), tomato, and cucumber, are tossed with olive oil, lemon juice, and oregano. (For dressing, figure 2 parts olive oil, 1 part lemon juice.)
- Enjoy a traditional Greek ending: fresh fruit. Citrus is a favorite; try grapes or figs, too.
Tzatziki Salad with Tomato (in Garlic-Yogurt Dressing)
- 1 cup plain low-fat yogurt 2 cloves garlic, crushed
- 1/2 cup fresh mint, chopped fine black pepper, to taste
- 1/2 cup fresh parsley, chopped fine 1 pound cucumbers (about 2 4 green onions, minced medium), peeled and chopped
- 3 tablespoons lemon juice V2 pound tomatoes, chopped
Mix yogurt, mint, parsley, green onions, lemon juice, garlic, and pepper together. Pour over cucumber and tomato mixture, and toss. Serve within an hour for best taste. Makes 6 servings.
