What’s cooking on your grill? Chances are, burgers—at least for one meal or another.

How do you grill the perfect burger? You can’t judge doneness by its color. The middle may be brown before your burger’s fully cooked, especially if you mix a dark sauce into raw ground meat. For safety’s sake, do away with guessing and use a meat thermometer or barbecue fork thermometer. Cooked properly, hamburgers and ground meat measure in at 160°F; ground poultry burgers, at 165°F.

For great, good-for-you burger flavor:

  • Mix in some herbs: garlic, chives, and basil; oregano and chili powder; ginger and coriander; cilantro, pepper flakes, and onion. Easy on the salt.
  • Go lean. Choose lean ground meat or poultry for patties. For something different, grill soyburgers or salmon patties.
  • Think beyond catsup, lettuce, and tomato. Top your burger with chutney, barbecue sauce, or salsa; roasted peppers, spinach leaves, or watercress; havarti, provolone, or blue-veined cheese.
  • Switch from buns. Try a tortilla wrap, foccacia, naan, a soft bagel, or a whole-wheat English muffin.
