Refrigerate leftovers: within two hours if they’re at room temperature; one hour if the temperature is 90°F or more. Put leftovers in shallow pans so they chill faster.
Use refrigerated leftovers within a safe time.
- Cooked vegetables, meat, poultry, and fish: 3 to 4 days
- Cooked seafood: 2 days
- Cooked pasta: 3 to 5 days
- Cooked rice: 1 week
- Cooked stuffing, gravy, and meat broth: 1 to 2 days
Safely reheat meat, poultry, and fish leftovers to 165°F. Use a meat thermometer to check.
Turn yesterday’s leftovers into a new dish.
- Make convenience soup heartier. Chop leftovers; toss them in as you heat the soup.
- Cook a quiche or a frittata. Mix leftovers in the egg mixture. Check a recipe for cooking directions.
