Americans may be eating more vegetables today, but a significant percent of those veggies are French fries—more than 25 pounds per person yearly!
Potatoes do offer plenty of health benefits: vitamin C, potassium, and fiber. Fry that same potato and calories double, vitamin C drops by half, and fat gets added.
- Challenge one: A serving of fries (about 10) with 160 calories and 8 fat grams can it with smart eating. However, most folks eat bigger portions.
- Challenge two: Potatoes aren’t the only vegetable. They won’t deliver all the health-promoting plant substances in green, deep-yellow, orange, and red fruits and vegetables. Variety is key.
Follow the five- to nine-a-day guideline with a simple edit: Eat at least ive different fruit and vegetable servings today.
- Pair fast food with salad. Skip fries; order a garden salad, slaw, or fruit cup with your burger.
- Pack whole fruit in your lunch bag. Try a tangerine, kiwi, berries, not just an apple or banana. Or tuck in a can of single-serve fruit.
- Add a veggie. Enjoy one more vegetable (in a starter, salad, soup, side dish) than usual at dinner if you don’t already consume at least three vegetable servings daily.
