Ready to smile from ear to ear? Enjoy summer-fresh corn on the cob—the fresher, the sweeter! When corn gets picked, its natural sugar starts changing to starch.

Whether fresh, frozen, or canned, corn often gets overlooked for its health benefits. Besides being a great source of complex carbs and fiber, yellow corn has plenty of zeaxanthin and cancer-fighting lutein. These plant substances (phytonutrients) in the carotenoid family also may help promote heart health and normal vision and may protect you in the long run from macular degeneration.

Since it’s peak corn season, enjoy some fresh-picked corn today.

  • Roast corn on the outdoor grill for a gentle, smoky flavor. Soak it 30 minutes or so in the husk; grill husk-on.
  • Microwave it. For moist corn in minutes, wrap each ear in wet paper towels or waxed paper first.
  • Cook a few extra ears. Remove the kernels and enjoy in soup, salad, salsas, and stir-fries.
